Olive oil is missing from the picture but its an important ingredient .
Slice the eggplant. You can remove the skin before slicing.
Lay the eggplant out on a foil lined cookie sheet. Brush olive oil on top, then place in the oven on broil for 3-5 mins or a little brown. Then flip the eggplant over, add more olive oil and repeat.
Cut up the eggplant into 4 or 6 depending on size. I use my handy dandy kitchen scissors.
Spray the casserole dish. Mix the eggplant, green pepper, and mushroom in the dish. Add sauce and stir well.
Add a few spoonfuls of cottage cheese (the amount is really up to you). Then sprinkle mozzarella cheese on top. Bake for 35-45 minutes on 400* then enjoy!
